Coconut salmon

Ingredients
- 4 pieces of salmon
- 2 cloves of garlic
- ½ small onion
- Ginger about 2cm
- 1 teaspoon of chilli flakes
- 1 can of coconut milk
- 2 tablespoons of chopped coriander
- Olive
- Salt and pepper
Preparation
Heating 1 teaspoon of olive oil in a saucepan over medium heat, frying the garlic for 3 minutes. Chopping the onion and grating the ginger, which, along with the chilies, are fried until softened. Adding coconut milk and cooking over medium heat until thickened for about 10 minutes.
Heat up a large cast iron skillet, season the salmon with salt and pepper, drizzle the pan with olive oil, and fry the salmon for 4 minutes on each side.
Serving salmon with warm spicy coconut milk sauce, sprinkle with chilies and cilantro.
