Automatic filleting lines precisely cut the backbone minimizing meat loss creating two perfect fillets.
Each fillet is scanned and an optimal trimming program is tailored to ensure high repeatability of the product.
The two-step process of removing the bones is based on a combination of automation and manual control by our employees.
Evenly distribute the brine in each fillet. We support manual salting with this process.
