Fry the onion in a pan. Add garlic. Add washed spinach and sauté until the leaves wilt and the water has almost completely evaporated. Transfer the cooked spinach to a bowl.
Fry two sunny-side-up eggs. Cut the avocado in half and slice it widthwise.
On a plate, arrange the spinach, avocado, fried eggs, and then the sliced salmon drizzled with lemon juice.
